Orange Flax Muffins Recipe
- 1-1/2 cups Raisins - Natural Unsulfured
- 1 cup Unbleached White Flour
- 1 cup Brown Flaxseeds
- 1 cup Wheat Bran
- 1 Tb Baking Powder
- 1/2 tsp Sea Salt
- 2 Whole Oranges (washed, quartered, peeled, & seeded)
- 1 cup Brown Sugar (packed)
- 1 cup Buttermilk
- 1/2 cup Canola Oil
- 2 Eggs
- 1 tsp Baking Soda
- 1-1/2 cups Oat Bran Cereal
Preheat oven at 375°F.
In a large bowl combine oat bran, flour, flax seed, wheat bran, baking powder and salt. Set aside.
In a blender or food processor, combine oranges, brown sugar, buttermilk, oil, eggs and baking soda. Blend well. Pour orange mixture into dry ingredients. Mix until well blended. Stir in raisins*.
Fill paper lined muffin tins 3/4 full. Bake 18 or 20 minutes or until wooden pick inserted in center of muffin comes out clean.
Cool in tins 5 minutes before removing to cooling rack.
